The dining scene di Ubud has never been this exciting before. Kota yang memiliki kultur budaya serta kuliner yang begitu majemuk ini tidak ketinggalan memperkenalkan salah seorang chef berbakat yang kini dipercaya untuk menangani dapur dari hotel kenamaan di Ubud yaitu Bisma Eight serta Folk Kitchen & Espresso di Jalan Monkey Forest.

Ya, dia adalah Chef Duncan McCance. Chef berpenampilan kekinian dengan janggutnya ini berasal dari Melbourne dan telah mengenal kultur dari Asia Tenggara, yaitu ketika ia bekerja di Singapura serta kini tentunya di Ubud setelah sebelumnya meniti pengalaman di negeri sendiri hingga sejauh Swedia.

Copper Kitchen & Bar milik Bisma Eight dikenal dengan menu-menu brunch yang terinspirasi comfort food bertemakan Asia dan banyak dari bahan makanan yang dipakai berasal dari kebun organik yang dimiliki oleh Bisma Eight, berlokasi tidak jauh dari hotelnya.

Pada kesempatan yang lalu FoodieS sempat berkunjung ke kebun ini dan mendapati sang chef tengah melakukan demo masak di hadapan para foodies asal Jepang. Setelahnya Chef Duncan bercerita banyak hal mengenai apa yang ia ingin suguhkan dengan kemampuan terbaiknya yang turut mewarnai kuliner kota Ubud.

The dining scene in Ubud has never been this exciting before. A city where one would find rich diversity in both food and culture, is now more than proud to introduce the talented Chef Duncan McCance - the executive chef of Bisma Eight and Folk Kitchen & Espresso.

A Melburnian who has went all the way from working in his own country to as far as Sweden, Mr McCance has also been immersing into the Asian cultures as well - thanks to his spell back in Singapore before moving to Ubud now.

Copper Kitchen & Bar at Bisma Eight is known for its creative take on brunch dishes, inspired by local influences and the chef is mainly using ingredients grown on the community garden owned by the hotel, not far from the establishment.

During FoodieS last trip to Ubud, we caught the chef in action - doing his cooking demo in front of Japanese tourists. Afterwards, the chef sat with us and tell FoodieS about his experience and what he offers best with his talents to the culinary scene of Ubud.
